Sunday, October 28, 2007

Week of Oct. 27 - Nov. 2

Saturday:
  • Stone Soup
  • "Chicken" patty burgers
    • Benjamin: This was a "use what's in the pantry" dinner, since we didn't feel like heading out to the store. The soup was built around some vegetable stock I'd made earlier in the day, seasoned with rosemary: into that went perhaps half a cup each of lentils and split peas, some thin-sliced potatoes, onions, and carrots sautéed with tomato paste and a bit of red wine, and half a bag of baby spinach tossed in at the end.
Sunday:
  • Knishes with Ashkenazic Cheese Filling, Olive Trees & Honey, p. 150
  • Mustard-Glazed Roasted Root Vegetables, Jump Up, p. 238
    • Carrie: As always when I make something with dough, I am overly anxious about how it's going to turn out. I made these with a yeasted dough and they turned out *really* well! A few of the knishes sprung leaks, but all-in-all a good recipe. And we made the vegetables in the romertopf - enough to feed an army but *so good*. The mustard flavor was a good accompaniment to the knishes.
Monday:
  • Tunisian Sautéed Vegetables, Olive Trees & Honey, p. 304
  • Moroccan Chickpea Salad, Olive Trees & Honey, p. 109
Tuesday:
  • Orecchiette with Broccoli Rabe, Almonds, and Manchego, Everyday Greens, p. 241
  • Garden lettuces with Pears, Fennel, Pomegranates & Pear Vinaigrette, Everyday Greens, p. 34
Wednesday:
Thursday:
  • Leftovers
Friday:
  • Veggie burgers
  • Green beans

Thursday, October 18, 2007

Week of Oct. 20 - 26

Saturday:
  • Buckwheat Crêpes with Caramelized Onions and Goat Cheese, Everyday Greens*, p. 192
  • Braised kale
    • Benjamin: We had to rush this dinner just slightly, with a Lyra Baroque concert to get to afterward, but the food deserved to be lingered over. The crêpes were the same as the galettes we'd come to love during our Normandy trip last year (in part because they provided the only reliable vegetarian options for many dinners!) and came out very successfully.
Sunday:
  • Calzones with Provolone Filling, Enchanted, p. 149
  • Broccoli rabe with Hot Pepper, Everyday Greens*, p. 300
    • Benjamin: The calzones turned into store-bought pizza crusts topped with provolone filling when our dough proved inert. Tasty results, but not quite as satisfying as producing home-made calzones.
Monday:
  • Puglian Bread Soup with Poached Egg
Tuesday: Benjamin at work dinner
  • Ziti with Sausage, Onion and Fennel, Lidia, p. 95
  • Spinach salad
Wednesday:
  • Farro and Roasted Butternut Squash, 101Cookbooks
  • Skillet-cooked Broccoli, Lidia's Italy, p. 277
    • Benjamin: Outstanding! I'd never had farro before but it was easy to work with (we used a semi-pearled variety and pressure-cooked it for 8 minutes) and the results were delicious.
Thursday:
  • Leftovers
Friday:
  • Hoppin' John (vegetarian variations on this recipe)
  • Sauteed Kale
    • Benjamin: I really appreciate black-eyed peas -- both for their earthy flavor and their ease of preparation -- and the Hoppin' John was a spicy and satisfying showcase.

Sunday, October 14, 2007

Week of Oct. 13 - 19

Saturday:
  • Angel Hair Pasta and Cheese Soufflé, Everyone, p. 462
  • Wilted Mustard Greens with Apples and Pecans, Southwestern, p. 61
    • Benjamin: The mustard greens were very tasty. The pasta soufflé? A bit bland. The basic preparation was fairly simple, and I liked the look and texture of the dish, but the flavor needed some zing.
Sunday:
  • Gnudi (p.213) with Butter and Fresh Sage Sauce (p. 118), Lydia's Family Table
  • Beans in a Bottle, Tuscan Style, Med Vegan, p. 162
    • Benjamin: The gnudi, described in the recipe as ravioli-filling prepared without the ravioli, were quite interesting, but could have used a more flavorful sauce. The beans were fragrant and delicious....and just about the easiest recipe imaginable.
Monday:
  • Baguette with Tapenade, Grilled Peppers, and Fontina, Everyday Greens*, p. 117
  • Dilled Broccoli Soup, Sass, p. 36
    • Benjamin: I really liked the tapenade we prepared for the sandwiches -- the addition of fennel to the more usual ingredients (olives, capers, etc) gave a welcome twist to the expected flavors. The broccoli soup was a bit of a dud -- quick and easy, yes, but a waste of tasty ingredients since it turned out as a bland porridge.
Tuesday:
  • Moroccan Chick-Pea Soup, Everyday Greens*, p. 101
  • Cornbread with Chiles, Baking, p. 36
    • Benjamin: The soup was fantastic. Even when packaging up the leftovers, full from having two big bowls along with the cornbread, I was thinking "Wow! This stuff smells great!". The cornbread, made from scratch, was much fresher tasting than the mixes we've tried recently.
Wednesday:
  • Two Potato Griddle Cakes, Everyday Greens*, p. 182
  • Green salad
    • Benjamin: The griddle cakes were a lot of work for a meager pay-off -- not bad, but a bit mushy and flat-tasting.
Thursday:
  • Leftovers
Friday:
  • Buckwheat Crêpes with Caramelized Onions and Goat Cheese, Everyday Greens*, p. 192
  • Braised kale

Sunday, September 23, 2007

Week of Sept. 22 - 28

Saturday:
  • Variations on 'Pasta with Butter and Fresh Basil Sauce', Lydia's Italy, p. 118
  • Skillet-cooked Broccoli, Lydia's Italy, p. 277
    • Benjamin: We combined the Butter and Basil sauce recipe with another that included cannellini beans. The result was a pasta with more body and an almost sweet flavor, though the beans rather than the basil were the most noticeable flavor element along with the butter.
Sunday:
  • Butternut Squash and Blue Cheese pizza
  • Salad
Monday: Carrie at FERN conference in New Orleans
  • Ricotta Omelet with crisp bread crumbs and sage, Suppers, p. 124
  • Green salad
Tuesday: Carrie at FERN conference in New Orleans
  • Leftovers
Wednesday: Carrie home late from airport
  • Indian night
Thursday:
  • Burger night
Friday: In Davenport

Saturday, September 15, 2007

Week of Sept. 15 - 21

Saturday:
  • Wheat Germ Soup, Silver Spoon
    • Benjamin: I thought this was wonderful -- just wheat germ and cannellini soaked overnight, then cooked slowly in stock with a bit of celery, tomato and onion, with basil to finish. The wheat germ provided some body to the broth and complimented the other ingredients very nicely.
Sunday:
  • Raw and Cooked Salad, Lidia's Italy, p. 297
  • Cheese and a crusty bread
    • Benjamin: The salad was excellent but perhaps not quite substantive enough to stand as an entree by itself -- I'd like to make it again and pair it with something more than bread and cheese...a gratin perhaps?
Monday: Ben at General Mills Management Off-site
Tuesday: Ben at General Mills Management Off-site
  • Pasta
  • Green Beans
Wednesday:
  • Chickpea Curry with Whole Spices, A Year in a Vegetarian Kitchen, p. 68
  • Spiced Creamed Spinach, Krishna's, p. 258
  • Naan
    • Benjamin: These made a nice alternative to our frozen Indian entrees, since they are simple enough to produce on a week night -- not quite as fast as the microwave, but tastier (and probably healthier too). The spinach turned out with much more liquid than when we'd made it before, but still tasted excellent.
Thursday:
  • Savory Corn Griddle Cakes, A Year in a Vegetarian Kitchen, p. 207
  • Lighter Refried Beans, A Year in a Vegetarian Kitchen, p. 434
  • Salad
Friday: Carrie at Guthrie with Ann C.
  • Omelette
  • Hashbrowns
    • Benjamin: I had a hankering for brunch food, so I whipped up an omelette from a few odds and ends we had on hand. For the potato side dish I had originally thought about rösti, but discovered that the more authentic recipes suggested boiling the potatoes a day in advance, so I settled for the more prosaic hashbrowns instead. Our new non-stick pan worked wonderfully for these, though the center was still slightly under done.

Sunday, September 09, 2007

Week of Sept. 8 - 14

Saturday:
  • Deep Dish Spinach Pizza from the Italian Pie Shoppe
    • Carrie: Mmm, always good!
Sunday:
  • Welsh Rarebit
    • Carrie: With a bit of chill in the air, Ben suggested we pull out one of our Fall favorites - made with a fine Belgian-style beer from Ommegang. The cheese was a bit clumpy, but Ben quickly solved the problem with a whir from the hand blender. Yum!
Monday:
  • Corn, Tomato, and Lima Bean Stew, A Year in a Vegetarian Kitchen*, p. 292
  • Corn Bread
    • Carrie: Nice idea, but for me, this wasn't 'main dish' material. I loved the edamame we substituted for the lima beans, but the flavors were a bit off (maybe the basil?).
Tuesday:
  • Rebaked Potatoes, Enchanted, p. 227
  • Green Beans with Toasted Walnuts and Tarragon, Vegetables Every Day*, p. 172
    • Carrie: Another Fall favorite - awesome! And I really liked the green beans recipe. The walnuts gave it a rich but mellow flavor.
Wednesday:
  • Indian!
Thursday:
  • Black Bean Chilaquiles, A Year in a Vegetarian Kitchen, p. 288
  • Mexican Citrus Salad, A Year in..., p. 33
    • Carrie: Oh, this was so good! I complained a bit in the beginning since there was more prep than I thought: baking the corn tortillas; and the the avocado, sour cream, and cheese toppings that I forgot about while prepping the salad. But the dish was really quite easy and fabulously good. Basically, it's like a taco salad stovetop casserole. And the citrus salad was a great accompaniment: orange and grapefruit slices with lime juice and chili powder - yum!
Friday:
  • Bulghur Salad with Chickpeas, Roasted Peppers & Spiced Cumin Dressing, A Year in..., p.268
  • Tomato Salad
  • Veggie burgers
    • Carrie: Couldn't find the right type of bulghur (the 'fine' kind), so we scrapped the salad for a good stand-in. I love the black bean veggie burgers, so I wasn't all that disappointed. And our garden tomatoes were tasty, too.
* A Year in a Vegetarian Kitchen and Vegetables Every Day are cookbooks by Jack Bishop that we recently checked out of the library. See more information under Cookbooks We've Explored.

Week of Sept. 1 - 7

Saturday: Dinner with Anne
  • Spinach and Zucchini Soup, 101 Cookbooks
  • Bread Pudding with Corn, Everyone, p. 294
  • Salad
    • Carrie: This was a nice dinner, but the soup was just fair. We'd made it with squash leaves, something we'd picked up from the Farmer's Market. The taste wasn't bad, it was just not flavorful. The bread pudding was fantastic, though.
Sunday:
  • Spinach Quesadillas, Suppers, p. 190
  • Roasted Corn Soup with Chipotles, Jump, p. 67
    • Carrie: Fabulous!!! There was a lot of chopping for this - not difficult, but time-consuming - so I'm glad we did this on a weekend. The quesadillas were quite easy and very tasty. The soup was very hearty and good. Both the quesadillas and the soup had quite a spicy kick - perhaps a bit overwhelming together for those not big fans of spicy foods. But I loved it!
Monday:
  • Eggs over Smoky Potatoes, Suppers, p. 122
  • Broccoli Rabe
    • Carrie: Easy, tasty, and very satisfying! The only trouble was in getting the eggs to set up. Ben put them under the broiler for a bit just to get the yolks to cook faster. A great start to the work week!
Tuesday:
  • Pasta with Salsa Arrabiata, Lidia, p. 128
  • Skillet-cooked Broccoli, Lidia, p. 277
    • Carrie: The sauce was tasty but wasn't as spicy as I thought it would be. The broccoli was yummy.
Wednesday:
  • Veggie Burgers
Thursday:
  • Pad Thai, Still Life, p. 155
  • Thai Cucumber Salad, Still Life, p. 156
    • Carrie: This was a really yummy pad thai recipe - and great for leftovers! The salad was nice, too. It looked so good, I had to snap a photo...
Friday:
  • Crispy Baked Eggplant with Blue Cheese Sauce, Still Life, p. 90
  • Baking Powder Biscuits, Still Life, p. 92
  • Romaine Salad with Apples, Still Life, p. 93
    • Carrie: These were nice recipes but the main dish didn't come off as good as it sounded in the recipe. The dominant flavor in the sauce was not blue cheese but mushroom. The eggplant was nice, but not fabulous. The real star was the salad! But for leftovers I was inspired to use the sauce and the biscuits to make biscuits and gravy - that turned out really well!

Week of Aug. 25 - 31

Saturday: Visited the St. Paul Farmer's Market and came away with enough fantastic produce for three dinners!
  • Eggplant and Summer Vegetable Gratin, Everyone, p. 280
  • Fresh edamame
Sunday:
  • Gnocchi, Lidia's Table, p. 210
  • Tomato Sauce III, Classic Italian, p. 95
  • Broccoli rabe
Monday: Carrie in Columbus, OH for a conference
  • Italian lentil soup (improvisation)
  • Green salad
  • French Peasant Bread (Breadsmith)
Tuesday: Carrie in Columbus, OH for a conference
  • Vegetable Pinto Bean Chili with Pico Sour Cream, Southwestern, p. 152
    • Benjamin: Tasty, but probably not tasty enough to justify the time and labor that went into it. I was pleased with the pinto beans: soaked for two whole days, they came out plump, intact and creamy.
  • Corn with Cumin, Chile and Tomato, Everyone, p.364
Wednesday: Carrie in Oakland, CA for a conference
  • Leftovers
Thursday: Carrie in Oakland, CA for a conference
  • Leftovers
Friday:
  • Fettucine with Blender Pesto, Classic Italian, p. 140
    • Benjamin: Our basil plants needed a bit of pruning, and what better way to take advantage?
  • Skillet Cauliflower, Lidia's Family Table, p. 268
    • Benjamin: This might be my new favorite cauliflower preparation -- slowly browned in olive oil with garlic and hot pepper flakes.

Saturday, August 18, 2007

Week of August 18 - 24

Saturday:
  • Ratatouille, Mastering I, p. 503
  • Couscous
Sunday:
  • Southwestern Pizza
  • Roasted Garlic White Pizza, foodnetwork.com
    • Carrie: Wow, these pizzas were awesome! We made a double batch of dough in the bread machine (after an earlier failed attempt - pays to follow the directions) and that made a fantastic crust. The southwestern had a yummy herb and garlic oil for the base, plus a nice mix of heat (peppers) and cool (tomatoes, sour cream, cheese). The white pizza was fantabulous! It has a garlic bechemel-type base with more garlic and lots o' cheese. It's a keeper!
Monday:
  • Red Bean Gumbo with Greens, Everyone, p. 321
  • Rice
    • Carrie: A tasty gumbo that made great leftovers.
Tuesday:
  • Grilled Brats (or Veggie Brats) with fixings
  • Steamed corn on the cob
Wednesday:
  • Indian!
Thursday:
  • Pasta with Butter, Sage, and Walnut Sauce, Lidia's Family Table, p.120
  • Green salad
    • Carrie: This was a fairly good dish, but not spectacular. The sauce smelled great - butter, walnuts, and sage - and it tasted good, but it was overwhelmed by the pasta.
Friday:
  • Veggie burgers
  • Tater tots

In Italy July 19 - 31

Thursday 7/19: Departure day
  • Delicious airport and airline food!
Friday 7/20: Arrival in Venice
  • Lunch - Bar Nostro in the Campo S. Bartolomeo
    • Benjamin: After settling into our apartment, we wanted to find a lunch spot that would be relatively quick and easy, and found what we were looking for just a few blocks away. Tables were set up in the middle of the Campo -- under umbrellas, fortunately, since it was quite warm -- and we enjoyed our first tastes of Italy. Nothing elaborate: just a pizza margherita for me and a salad for Carrie, washed down with some acqua minerale and a glass of prosecco. We got our first taste of the crowds as well, since the sottoportico that lead towards Piazza San Marco disgorged a constant stream of people into the Campo, strengthening our decision to avoid the most congested spots until we'd better recovered from our flight.
  • Dinner - Trattoria Casa Mia
    • Benjamin: This was a nice find -- marked on our Rough Guide map, but really just a neighborhood joint in Cannaregio a short walk from the apartment. Prices were lower but the food was tasty and they were generous with the prosecco. We sat "outside" in a small roofless but enclosed space that was just as hot and stuffy as the rest of Venice.
Saturday 7/21: Venice
  • Breakfast - Cafe near our apt on the Salizada S. Canzian close to Campo S. Maria Nova
  • Lunch - Bar Ristorante Le Bomb, Biennale-Arsenale Cafe
    • Benjamin: Mostly a stop of convenience, since we'd spent the morning at the Arsenale exhibits of the Biennale, but the space was nice -- an enclosed courtyard within the Arsenal walls -- and a Caprese Salad with a beer was the perfect meal for another sweltering afternoon.
  • Dinner - Birraria La Corte
    • Benjamin: The evening started with frustration. We had telephoned the day before to reserve a table at a place called La Zucca, which I'd read about in guide books and seemed like the closest I was likely to get to a vegetarian-friendly restaurant in Italy; the food was supposedly good all around, and we were looking forward to dinner after an afternoon at Torcello. By chance, I called ahead to change the size of our party, since we'd been expecting Emily and Kate but they'd been delayed a day, and it turned out they had no record of our reservation....no room for a party of two either. I was extremely disappointed and resolved from that point on not to bother with making reservations. Plan B was a popular and family-friendly place on the Piazza San Polo. Eating outside would have been nice, but we chose not to wait and instead ate inside, with a full view -- and some of the heat -- from the kitchen, staffed apparently by Africans. Regardless, the food was satisfying.
Sunday 7/22: Kate and Emily join us in Venice
  • Breakfast - Cafe near our apt on the Salizada S. Canzian close to Campo S. Maria Nova
  • Lunch - sandwiches to go from Snack & Sweet, eaten on a canal-side quay
    • Benjamin: The sandwiches were tasty, but the most remarkable feature of the Snack & Sweet was the collection of pornographic paintings (painted by the owner?) hung on its walls.
  • Dinner - Hotel Malibran, Cannaregio
    • Benjamin: Just around the corner from our apartment, this was a friendly spot with adequate but not distinguished food. The diverse soundtrack of English and American '80s hits -- ranging from New Wave to early rap -- was a somewhat jarring element.
Monday 7/23: Venice to Ravenna
  • Breakfast - Cafe near the Rialto market
  • Lunch - Pizzeria Cupido
    • Benjamin: We found this spot just off the Via Cavour on our way from our hotel to see the sights -- and happily they specialized in piadina, one of the unique regional foods of Romagna, a type of flatbread sandwich somewhat akin to a fajita. We ate outside in a little courtyard where the proprietors generously set up a small table and chairs for us.
  • Dinner - Cafe Grand Italia, Piazza del Popolo
    • Benjamin: Our choices for dinner were somewhat limited by the fact -- unknown to us until our arrival in Ravenna -- that this was the festival day for the city's patron saint, San Vitale, and many of the inhabitants take the day off and head for the beach. The place we chose was right on a central Piazza, so the highlight for me was less the food than the people-watching, since it seemed to be a spot where families gathered in the evening to let their small children race around before bedtime.
Tuesday 7/24: Ravenna to Siena
  • Breakfast - on the rooftop of the Hotel Villa Santa Maria in Foris
  • Lunch - sandwich place in Poppi
  • Dinner - Al Marsili, Via del Castoro
    • Benjamin: We tried to find a place to eat outside on the Piazza del Campo, which was set up for an evening jazz concert, but that apparently would have required some advance booking. Just as well really: when we stopped back in the Piazza later, with the concert still going strong, I found the music not to my liking. Anyway, we wandered back towards the cathedral and stumbled upon Al Marsili, housed in a beautiful old space with vaulted ceilings, where we enjoyed a very fine meal. The ambiance was somewhat diminished by a large party of noisy Americans seated near us, though in this case the culprits were small children rather than boorish adults.
Wednesday 7/25: Siena to Florence
  • Breakfast - on the lawn of the Hotel Borgo Grondaie
  • Lunch - B. Gallo, Piazza S. Giovanni
    • Benjamin: A late lunch outdoors, just across from the Baptistry, after a morning spent in San Gimagnano.
  • Dinner - Trattoria Za-Za
    • Benjamin: A large, noisy, boisterous place that came well-recommended in several of our guides for its genuine Tuscan fare. Good food, but memorable mostly for the very loud group from Alabama at the next table, where discussion of "carbon credits" seemed to elicit a surprising level of passion (and decibels). Here, as elsewhere on our trip, we found ample evidence that we were not the only Americans undeterred by the weak dollar.
Thursday 7/26: Florence
  • Breakfast
  • Lunch - sandwiches to go, eaten on the steps of the Uffizi watching the street performers
  • Dinner - Trattoria "Il Porcospino" alle Cappelle Medicee
    • Benjamin: My favorite restaurant name of the trip -- "The Porcupine" -- but one of the least satisfying restaurant experiences, not so much because of the quality of the food, but because our waiter seemed like a hustler, more concerned with steering us towards "high revenue" menu items than with making our dinner enjoyable. Both he and another waiter (an Albanian if we overheard accurately) spent much time flirting with the attractive women who were dining alone at the restaurant.
Friday 7/27: Florence
  • Breakfast
  • Lunch - Trattoria Za-Za
    • Benjamin: We stopped back at Za-Za (our only repeat visit, other than breakfasts, during the whole trip) since it lay along our route from San Lorenzo to Santa Maria Novella, but it was also nice to eat outside on the Piazza Mercato Centrale this time. A nice lingering lunch: pizzas, salads, wine and coffee.
  • Dinner - Osteria L'Antico Noe
    • Benjamin: A hard-to-find little spot recommended to us by Luca, the owner of the apartment we rented, and probably the best restaurant we ate at during our whole trip.
Saturday 7/28: Florence to Verona
  • Breakfast
  • Lunch - Pizzeria da Gianni, Carpi
    • Benjamin: We stopped in Carpi somewhat on a whim, since we didn't think we could stave off our hunger pangs until arriving in Verona. Carpi was a few miles off the autostrade, but our Blue Guide spoke well of it, so we decided to check it out. We explored the porticos around the large central piazza a bit before stopping in at Pizzeria da Gianni.
  • Dinner - picnic fare at the Arena
Sunday 7/29: Verona to Stresa
  • Breakfast - at the Hotel Verona
  • Lunch - cafe off Via Mazzini, between Piazza delle Erbe and the Arena
  • Dinner - Albergo La Ripa, Baveno
    • Benjamin: An inn just down the road from our B&B where we could eat on a lawn looking out over Lago Maggiore towards the Bartolomeo islands. The food was quite good and our three omnivores, for the only time on the trip, decided to order both primi and secondi (the herbivore might have, but vegetarian secondi were not to be found).
Monday 7/30: Stresa
  • Breakfast - at our B&B La Sorgente
  • Lunch - on the lakeside piazza in Orta S. Julia
  • Dinner - Ristorante Posta in Baveno
    • Benjamin: Perhaps our most amusing dinner. On the recommendation of our B&B hostess Francesca, we walked down to this spot off the central square in Baveno. On asking the middle-aged woman who greeted us for a table, we were generously offered prime real estate - a table outside - and gladly accepted, since the weather was lovely. From the start, there was clearly a communications gap that the woman's English and our Italian could not bridge, but we muddled through and ordered successfully. Meanwhile, other evidence of our waitress's confusion mounted: for example, she somehow decided that one waiting party of four was actually two different groups and tried to split them up at different tables. It was also clear as the meal progressed that there was a backlog waiting for outside tables, and eventually the woman approached and asked -- in French, which nobody had spoken to this point -- whether we'd had a reservation. Happily, my French was up to the challenge so I could explain that we'd simply wandered up, asked for a table and been seated. She did suggest that she'd asked us then whether we had a reservation, but -- despite the very limited Italian vocabulary that Carrie and I had managed to acquire -- we're quite certain she did not. It crossed my mind that she might ask us to move -- right in the midst of eating our primi -- but she didn't. From that point on I spoke to her in French, though she responded mostly in Italian, and I offered to pay in advance and to clear out after our secondi, since there was a gelato place just steps away that looked like a better bet for dessert. For all that, the food was excellent -- perhaps one of our three best dinners in Italy. Francesca later suggested that the ladies who own and run the restaurant (but don't do the cooking) are known to refresh themselves at their own bar a bit too often.
Tuesday 7/31: Home again
  • Breakfast - "brown bag" breakfast prepared by our hostess at La Sorgente
  • Lunch - US Airways
  • Dinner - TGI Fridays at the Philadelphia Airport
    • Benjamin: Had the one merit of making me realize how good the food had been at even the worst places in Italy....

Lidia's Italy is a cookbook we checked out from the library after seeing her cooking show on PBS. True to the best Italian cooking we've explored (like The Silver Spoon cookbook), the best recipes are simple but immensely flavorful.

Friday, May 25, 2007

Week of May 26 - June 1

Saturday:
  • Bhaigan Bhartha (Mashed Smoky Eggplant with Tomatoes)
  • Basmati rice
  • Naan
    • Carrie: This was very tasty - it had some real Indian flavor! Advice for next time: skip roasting the eggplant. It was a pain and didn't cook it enough, so we wound up slicing it an putting it under the broiler
Sunday:
  • Orrechiette with Cherry Tomatoes and Dandelion Greens
  • Salad
    • Carrie: This was a recipe inspired by Lidia's Italy. She used a different green that was not in stock at our market, so we substituted. Wow, the dandelion greens were a nice surprise! They had a great peppery sharpness to them.
Monday: Memorial Day
  • Brats
  • Potato Salad w/Olives, Tomatoes, and Capers, epicurious.com
  • Vegetarian Baked Beans - from various recipes here and here
    • Carrie: Well, the beans were a lot of work for less-than-great results, partly because I miss-read the recipe. The potato salad was a nice change from the overly-dressed American variety.
Tuesday:
  • Roasted Red Pepper & Tomato Soup
  • French Bread
  • Camembert
    • Carrie: A last-minute decision to go with an old stand-by. The soup is a great from-a-box brand called Pacific. Soup, bread, and soft cheese... mmmm - it's always good!
Wednesday:
  • Risotto Alla Primavera, epicurious.com
  • Sautée de Champignons Sauvage (Wild Mushroom Sautée), epicurious.com
    • Carrie: This turned out quite well! The mushrooms were fabulous! I cut this recipe in half (1 lb. of mushrooms instead of 2) mainly because these types of wild mushrooms are expensive. But we did find a nice "chef's mix" of all sorts of mushrooms, and that worked out well. The full-flavored mushrooms was a nice accompaniment to the more mild-flavored risotto.
Thursday:
  • Indian!
Friday:
  • Veggie stir fry

Week of May 19 - 25

Saturday:

Sunday: Round trip to Madison to pick up Emily
  • Slow-cooker chili
  • Buttermilk biscuits, Baking Illustrated, p. 55
    • Benjamin: The "best vegetarian chili in the world", as the recipe claims? Not quite, but still good -- and it was definitely nice to get home from a 10 hour road trip and have dinner ready!
    • Carrie: It sure was tasty! And I love this biscuit recipe - so easy! You can use a food processor to make the dough, pull out the dough and shape into a round (like a cake round) and cut into cake-like slices with a dough cutter. Put them on a baking sheet and bake for 12 minutes. Flaky and yummy!
Monday:
  • Spaghetti and Salsa Verde with Walnuts & Tarragon, Everyone, p. 55
  • Cauliflower with Bread Crumbs, Everyone, p. 354
    • Benjamin: The salsa verde is in the same family as the trapanese pesto we tried a week or two ago (olive oil, green herbs, nuts) but the flavors were different: all parsley rather than a basil/parsley mix, walnuts in place of almonds, the addition of capers. I especially liked the subtle anise flavor from the tarragon.
    • Carrie: Wow, this hit the spot! Nothing more to add but that the flavor had a nice fresh zing to it (not spicy).
Tuesday: Carrie in DC
Wednesday: Carrie in DC
  • Leftovers
Thursday: Carrie home late
  • Italian vegetable soup with gnocchi
    • Benjamin: The recipe I found online provided inspiration, but I didn't follow it to the letter. I'd just made a fresh batch of vegetable stock and we had a package of shelf-stable gnocchi in the cupboard, but for the rest I basically used this as an excuse to clear out various neglected vegetables from the drawers in our fridge. Turned out very nicely nevertheless....
    • Carrie: Another one of Benjamin's great concoctions. And great for lunches, too!
Friday:
  • Pizza from Pappa John's
    • Carrie: Hey, we had a coupon...

Sunday, May 13, 2007

Week of May 12 - 18

Saturday:
  • Pan Bagnat with Saffron-Basil Vinaigrette, Everyone, p. 127
  • Crispy Roasted Garlic Potatoes, Cook's Country Magazine
Sunday:
  • Vegetable Gratin-Soufflé, Everyone, p. 288
  • Tomato and mozzarella salad
Monday:
  • Curried Crookneck Squash Soup, Everyone, p. 214
  • Buttermilk biscuits, Baking Illustrated, p. 55
  • Grilled asparagus
Tuesday:
  • Tacos
Wednesday:
  • Indian!
Thursday:
  • Galettes with mushrooms and Pont L'Eveque cheese
  • Salad
Friday:
  • Stir-Fired Brown Rice with Broccoli Rabe, Everyone, p. 268

Saturday, May 05, 2007

Week of May 5 - 11

Saturday:
  • Creamy Macaroni and Cheese, AllRecipes.com
  • Salad
      • Carrie: The best! It was a little cooler and rainy, so I suggested this comfort food favorite.
Sunday:
  • Pasta with pesto Trapanese - recipes include epicurious.com, Erica De Mane, and RecipeSource.
  • Broccoli
  • Mango Upside-Down Cake, Baking Illustrated, p. 331
      • Carrie: We saw this type of pesto on a cooking show and thought it sounded good. We couldn't find the recipe from the show, but we compiled a plan from some other recipes. It was excellent! Not too heavy, but rich and garlic-y.
Monday:
  • Pizza
Tuesday:
  • Leftovers
Wednesday:
  • Sautéed Eggplant and Bell Pepper, Krishna, p.205
Thursday:
  • Leftovers
Friday:
  • Take-out from Huong Sen

Monday, April 30, 2007

Week of April 28 - May 4

Saturday:
  • Pizza from the Italian Pie Shoppe
Sunday:
  • Baked Potatoes w/Green Chile-Cream Cheese Sauce, Jump Up & Kiss Me, p. 243*
  • Shredded Brussels Sprouts salad
      • Carrie: The sauce was quite good but I had two issues with it: (1) it was too thick - I'd keep some tomato juice (or veggie stock) on had to thin it, and (2) it didn't make enough for four potatoes - I'd double this recipe.
Monday:
  • Pasta w/Cannelini Beans and Broccoli, Jump Up & Kiss Me, p. 95
  • Tomato vinaigrette
      • Carrie: This was an easy and tasty pasta recipe. It calls for steaming the broccoli beforehand, but I think the broccoli got a little overcooked, so I'd steam the broccoli for a shorter time. The tomato viaigrette that Benjamin whipped up was excellent: grape tomatoes, cilantro, and a homemade dressing - yum!
Tuesday:
  • Vegetarian Gumbo
  • Wild and brown rice
      • Carrie: Benjamin had the great inspiration for using up some ingredients we had in the fridge and pantry: a vegetarian gumbo! We used Emeril's recipe as a guide, omitting the meat, using vegetarian Worcestershire sauce, and adding canned tomatoes and fresh zucchini that we had laying around. Boy, was it great! A nice kick but not too hot. The roux gave it a velvety texture. I had it for lunch several times and never got tired of it!
Wednesday:
  • Indian!
Thursday:
  • Veggie bratwurst
  • Broccoli rabe
Friday:
  • Black Eyed Peas w/Mustard Greens, Jump Up & Kiss Me, p. 143
  • Rice
      • Carrie: I haven't been too impressed with the recipes from our new cookbook, but this one was easy, hearty, and tasty - a perfect combination!
____________
* We recently purchased Jump Up and Kiss Me from a used book store and added it to our cookbooks library.

Sunday, April 22, 2007

Week of April 21 - 27

Saturday:
  • Leftovers
Sunday: Event: Dinner w/Renée, Mira, and Kathleen at Fasika

Monday:
  • Gnocchi with Tomatoes, Pancetta, & Wilted Watercress -Eating Well, May/June 2007, p. 24
  • Broccoli
      • Carrie: Yum! The sauce was easy and lovely. The little splash of vinegar added at the end gives it a nice, fresh bite. The shelf-stable gnocchi isn't as good as home-made, of course, but a nice, quick dinner.
Tuesday:
Wednesday: Event: Benjamin returns
Thursday:

Friday:

Saturday, April 14, 2007

Week of April 14 - 20

Saturday: Event: Benjamin to Mumbai
  • Enchiladas - combination of a couple of recipes:
  • Salad
      • Carrie: This was excellent! I used the first recipe as the main recipe, but instead of the brown rice, I used the roasted, spiced potato cubes from the second recipe. I also substituted enchilada sauce for the picante sauce and salsa - some went into the filling, lots more went on top. Really flavorful and filling!
Sunday:
  • Egg Thread Soup with Asparagus, Eatingwell.com
  • A nice crusty bread
  • A selection of cheese odds & ends
      • Carrie: This was a nice, delicate soup. The flavors were almost too mild to my taste, but that is probably so as not to overwhelm the asparagus, which was lovely. I thought there were too many egg threads and it made the soup too bulky. Not sure I'll make this again, but I'll definitely seek out another asparagus soup recipe.

Monday:
  • Slow-cooked Chili, all|recipes.com
      • Carrie: This hit the spot! Sautéed the ground beef and onions the night before (no, this was not vegetarian) and put everything in the slow cooker pot to set overnight in the fridge. Put it on low in the morning for about 10 hours. Nathan's game would up going very long, so how fortuitous to have a hearty chili waiting for him. The two of us nearly cleaned the whole thing out (save one serving for lunch the next day).
Tuesday:
  • Pizza
  • Corn/Edamame mix
      • Carrie: Yes, very unimaginative. Nothing more to say.

Wednesday:
  • Indian!
      • Carrie: Another unimaginative dinner, but I'm never disappointed in the Deep frozen Indian dishes. I ate this thinking of Benjamin having the real deal this week!

Thursday:
  • Salmon Burgers
  • Salad
      • Carrie: Got home from work and checked our stock. We had some salmon burgers and buns in the freezer, a tomato, and an onion. Sounds like a meal to me!
Friday:
  • Emily's Excellent Taco Casserole, all|recipes.com
      • Carrie: I was about to leave work and I thought I'd skim all|recipes.com for dinner ideas. This recipe was exactly as promised: quick, easy, one pan. Well, I turned it into two pans by sautéing onion and green pepper with some cumin, but it sure was easy! The 6 cups of tortilla chips seems like a lot, but they do compress down and keep everything together nicely. Chili, cheese, onions, tomatoes, sour cream - what's not to like? It's not gourmet, but it hit the spot!
I didn't do much planning this week beyond Monday, and it shows. But there were a few winners in there. I hope to get back on track when Benjamin returns this week.

Week of April 7 - 13

Whoops!

We got so caught up with Spring Break, Easter, and our Anniversary that we've let this lapse. Let's start fresh with April 14!

Saturday, March 31, 2007

Week of March 31 - April 6

Saturday:
  • Green Lentils w/ Wine-Glazed Vegetables, Everyone, p. 301
  • Cream Biscuits w/ Cheddar Cheese, Bakers Illustrated, p. 57
Sunday:
  • Artichoke & Sun-Dried Tomato Filo, Fields of Greens, p. 242
  • Sicilian Salad w/ Roasted Eggplant, Peppers & Garlic, Fields of Greens, p. 54
Monday:
  • Palak Panir Sak, Krishna, p. 349
  • Cauliflower crowned w/ Creamy Avocado, Krishna, p. 372
Tuesday:

Wednesday:
  • Asparagus Omelet, Cook's Illustrated May/June 2007, p. 21
Thursday:

Friday:

Sunday, March 25, 2007

Week of March 24 - 30

Saturday:
  • Veggie bratwurst
  • Grilled asparagus
Sunday:
  • Black Bean & Pumpkin Soup w/ Cinnamon & Ginger, Once Upon a Tart, p. 57
  • Tortilla Chips
  • Avocado & Greens Salad
      • Carrie: This was a simple and very tasty soup. The pumpkin added body, but did not overpower the flavor of the soup. I'm going to copy this recipe down before we return the cookbook.
Monday:

Tuesday:
  • Mozzarella Sandwiches w/Oven-Roasted Tomatoes & Pesto, Once Upon a Tart, p. 91
  • Chickpea & Carrot Salad w/ Cumin & Black Olives, Once Upon a Tart, p. 137
      • Carrie: Wow - two winners! The oven-roasted tomatoes were so simple and very flavorful. I bought some of the mini Ciabatta loaves for these sandwiches as I did before and that worked out well. And the salad was a surprise sensation! The dressing (we used chili powder because we were out of cumin) was so tasty and actually clung to the veggies well. So many salads have runny, gloppy, or oily dressing, but this was really great. We're writing this one down for future use.

Wednesday:
  • Mushroom Risotto with Leeks and Fennel, Fields of Greens, p. 164
  • Edamame
      • Carrie: We did the risotto in the pressure cooker, because we were pressed for time. The recipe called for 6 cups of broth -- too much for the rice to absorb in the pressure cooker, so we had to do a bit of stirring at high heat to evaporate the excess liquid. The resulting risotto was fine, but the taste sensation of this meal was the special cave aged Parmesan that Ben purchased. That was fantastic.
Thursday:
  • Spicy Corn Cakes with Smoked Cheese and Chilies, Fields of Greens, p. 227
  • Mixed Green Salad w/ Avocado
      • Carrie: The corn cakes were super easy and quick to assemble and cook. I didn't realize it before hand, but these cook very much like a thick pancake. That also meant that, like pancakes, they improve with each batch. The first batch too longer to cook and didn't cook evenly. I should have waited for the pan to be hotter before I started. But the taste was great. This would be a good Summer meal since the cooking time is minimal and the prep is easy.

Friday: Event - Spring Break Begins
  • Cincinnati Chili
  • Salad
      • Carrie: With the start of the kids' Spring Break, we wanted something easy. So Ben had the great idea of making what we had on Super Bowl Sunday. Mmm... Chili and spaghetti...

Saturday, March 17, 2007

Week of March 17 - 23

Saturday:
  • Palak Shorva (Curried Spinach Soup with Toasted Coconut), Fields of Greens, p. 90
  • Cauliflower
      • Carrie: This was a nice soup, but I thought a bit too mild.
Sunday:
  • Garlic Potato Soup, Cooks Illustrated Mar/Apr 2007, p. 13
  • Fall Salad with Warm Gorgonzola Croutons, Fields of Greens, p. 38
      • Carrie: Yum! A hearty soup with a mix of Russet and red potatoes. The Russet become mushy and blend into the background of the soup while the red potato chunks stay intact. The salad was fabulous: golden beets, greens, apples and a bit of onion. I was never a big fan of beets, but we've made some great beet recipes recently, this one included.
Monday:
  • Penne Pasta with Grilled Fennel & Roasted Eggplant, Once Upon a Tart, p. 147
  • Broccoli
      • Carrie: Fennel is another ingredient I hadn't been wild about, but we've tried several recipes with fennel and I've come around to being a fennel fan. The thinly sliced fennel and eggplant are roasted separately, then combined with the pasta. The roasting gives it a wonderful mellow flavor.
Tuesday:
  • Goat Cheese Sandwich with Roasted Peppers, Once Upon a Tart, p. 89
  • Chickpea Salad with Lemon and Parmesan, Orangette
      • Carrie: I'm so pleased how well this turned out! I found some fabulous mini ciabatta loves at Breadsmith - just the right size for a sandwich. The peppers were roasted over an open flame on our gas cooktop, then put in a paper bag, allowing the flavors to develop while we did other things. The goat cheese spread was super easy (pulse cheese with dried herbs and olive oil). The recipe also called for a olive dressing using tapenade, which we didn't have, but Ben did a marvelous job whipping up something. Everything was quite easy and quite good - we'll have this again!
Wednesday:
  • Leftovers
Thursday:
  • Buckwheat Noodles w/ Shitake, Bok Choy, Ginger & Scallions, Fields of Greens, p. 129
  • Edamame
      • Carrie: Mmm, this was a terrific Asian noodle dish. Nicely spiced and very satisfying. And I always love an excuse to steam up some edamame.
Friday:
  • Eggs Italiano, Eating Well Apr 2007, p. 27
  • Mixed green salad
      • Carrie: This dish was a bit of a disappointment. The poached eggs turned out great, and the veggies were good, but it just didn't come together into an interesting dish. It left me wishing we'd done huevos rancheros instead.

Sunday, March 11, 2007

Week of March 10 - 16

Saturday:
  • North African Vegetable Stew, Fields of Greens, p. 192
  • Israeli toasted couscous
Sunday:
  • Enchiladas Rojas, Fields of Greens, p. 244
  • Grilled asparagus
      • Benjamin: Perhaps it was the recipe, perhaps our lack of skill with rolling tortillas, but this turned out more like a casserole than an enchilada dish. Tasted good though.
      • Carrie: Yup, the tortillas fell apart during baking. We tried the blue corn variety - maybe they don't hold up as well?
Monday:
  • Tomato-Fennel Pizza with Provolone Cheese, Fields of Greens, p. 172
  • Coleslaw, Moosewood, p. 72
      • Benjamin: We actually made two pizzas -- one from the tomato-fennel recipe above, one improvised from ingredients we had on hand (fresh basil with black olives and roasted pine nuts). The dough we made in advance with the bread machine, using the Fields of Greens recipe with one substitution -- one tbsp of buckwheat flour (which we had) in place of the called-for one tbsp of rye flour. Both pizzas were delicious!
      • Carrie: Love the bread machine - set it and forget it! And the pizzas even tasted great when I had some slices cold for lunch the next day.
Tuesday:
  • Simple Potato and Green Pea Stew, Krishna, p. 209
  • Salad
Wednesday:
  • Leftovers
Thursday:
  • "The Rustler" Pizza (bbq mock duck, pineapple, banana peppers) from Pizza Lucé
      • Benjamin: Yes, this was our second pizza dinner of the week, but we were feeling lazy and had wanted to try out one of the vegetarian selections at the new Pizza Lucé that opened near us recently. What we ordered was good, though I have to say that I thought the pizzas we made ourselves on Monday were better.
      • Carrie: BBQ mock duck was awesome!
Friday:
  • Fettuccine w/Chard, Currants, Walnuts and Brown Butter, Fields of Greens, p. 130
  • Bread
  • Salad
      • Benjamin: We couldn't get our butter to brown for this (perhaps because we used salted butter rather than unsalted...details matter) and couldn't find the called for golden raisins at Whole Foods, but the dish turned out well -- rich, with a hint of sweetness.
      • Carrie: This was such a dish. I felt it had a great "comfort food" quality while not being too heavy or smothered in sauce.

Saturday, March 03, 2007

Week of March 3 - 9

This week, we are choosing recipes that use ingredients we have on hand in our over-stuffed pantry.

Saturday: Event: Michelle R's Birthday
  • Barley Soup with Caramelized Onions and Pecorino Cheese, Everyone, p. 223
  • Salad
Sunday:
  • Potato, Fennel, and Leek Gratin, Fields of Greens, p.210
  • Kale
      • Benjamin: Another recipe in which the fennel blended nicely into the whole, giving an interesting kick to the flavors without overwhelming the other ingredients.
Monday:
  • Fettuccine with Spicy Raw Tomato, Herb, and Caper Sauce, Med. Vegan, p. 104
  • Broccoli
      • Benjamin: This was very flavorful and easy to prepare -- it'll be even nicer in the summer when fresh tomatoes are better and less expensive.
Tuesday:
  • Minestrone (with pinto beans, carrots, pasta, celery, and Parmesan), Classic Italian, p. 66
  • French bread
Wednesday: Event: the Chieftain's
  • Indian night
Thursday:
  • Leftovers
Friday:
  • Baked Manicotti (1/2 recipe), Cooks Illustrated #84, p. 13
  • Green Salad
      • Benjamin: There was a bit of a 'sophomore slump' dynamic at work here -- this was the second time we made this particular manicotti recipe, and it didn't come out nearly as well as the first. But it's still tasty enough that I'm sure we'll try again.
