- Spinach and Zucchini Soup, 101 Cookbooks
- Bread Pudding with Corn, Everyone, p. 294
- Salad
- Carrie: This was a nice dinner, but the soup was just fair. We'd made it with squash leaves, something we'd picked up from the Farmer's Market. The taste wasn't bad, it was just not flavorful. The bread pudding was fantastic, though.
- Spinach Quesadillas, Suppers, p. 190
- Roasted Corn Soup with Chipotles, Jump, p. 67
- Carrie: Fabulous!!! There was a lot of chopping for this - not difficult, but time-consuming - so I'm glad we did this on a weekend. The quesadillas were quite easy and very tasty. The soup was very hearty and good. Both the quesadillas and the soup had quite a spicy kick - perhaps a bit overwhelming together for those not big fans of spicy foods. But I loved it!
- Eggs over Smoky Potatoes, Suppers, p. 122
- Broccoli Rabe
- Carrie: Easy, tasty, and very satisfying! The only trouble was in getting the eggs to set up. Ben put them under the broiler for a bit just to get the yolks to cook faster. A great start to the work week!
- Pasta with Salsa Arrabiata, Lidia, p. 128
- Skillet-cooked Broccoli, Lidia, p. 277
- Carrie: The sauce was tasty but wasn't as spicy as I thought it would be. The broccoli was yummy.
Thursday:
- Pad Thai, Still Life, p. 155
- Thai Cucumber Salad, Still Life, p. 156
- Carrie: This was a really yummy pad thai recipe - and great for leftovers! The salad was nice, too. It looked so good, I had to snap a photo...
- Crispy Baked Eggplant with Blue Cheese Sauce, Still Life, p. 90
- Baking Powder Biscuits, Still Life, p. 92
- Romaine Salad with Apples, Still Life, p. 93
- Carrie: These were nice recipes but the main dish didn't come off as good as it sounded in the recipe. The dominant flavor in the sauce was not blue cheese but mushroom. The eggplant was nice, but not fabulous. The real star was the salad! But for leftovers I was inspired to use the sauce and the biscuits to make biscuits and gravy - that turned out really well!
