- Anasazi Cowboy Chili (adapted to be vegetarian) -- we didn't find Anasazi beans, so used pinto instead, but were successful finding Nopales at our local Mexican market, El Burrito Mercado!

- Fettuccine in Black Pepper Cashew Chardonnay Sauce with Asparagus, Spinach, and Bell Pepper (I think this wins a prize for longest recipe title on this blog)

- Vegetarian tamales from El Burrito Mercado

- Potato-Leek Gratin
- Salad
