- Winter Squash Risotto with Seared Radicchio by Deborah Madison - this is the main recipe, but with the two additions from Jack Bishop mentioned below.
- Winter Squash Risotto with Sage and Parmesan by Jack Bishop - steep the squash seeds and strings in the broth to be used for the risotto to impart more squash flavor; also, use dry white wine as the first liquid added to the Arborio rice
- A green side - whatever looks good at the market (broccoli rabe, chard, etc.)
